Christmas Orange & Chocolate Cookies

These Christmas Orange & Chocolate Cookies are going to be made on repeat this month. They’re so delicious, super chewy and give me all the festive vibes with the orange, chocolate & spice combo! These are a gorgeous festive treat to share with family, enjoy! 


All you need is…

200g Ground Almonds

½ tsp Bicarb of Soda

½ tsp all spice

50ml Coconut Oil (melted, slightly cooled)

70g (50ml) Maple Syrup

Zest of a whole orange & a squeeze of juice

½ tsp Almond Extract

Pinch of Sea Salt

80g Dark Chocolate Chips


Method:


Preheat the oven to 175°C and line a baking sheet with parchment paper.


In a bowl, mix together the almond flour, baking soda, all spice, coconut oil, maple syrup, almond extract, orange zest/juice, and salt.


Portion the mixure into balls roughly two tablespoons in size and place onto the baking sheet. Press down to slightly flatten. Leave at least three inches (8 cm) of room between each cookie.


Bake for 10 to 12 minutes or until golden. Let the cookies cool for about ten minutes.


Meanwhile, melt the chocolate in a double boiler or in 30-second intervals in the microwave.


Drizzle the chocolate onto the cookies and refrigerate for approximately 15 minutes or until the chocolate has hardened. Enjoy!
